DESCRIPTION:Established in 2007\, the vineyards at Dodon are fortuitously situated on rolling hills just south of Davidsonville\, Maryland. When they began their first experiments with 150 vines\, the goal was clear: to practice sustainable agriculture and produce exceptional wines. As ninth generation custodians of this historic farmland\, and as demanding winemakers\, they are committed to using viticultural practices and winemaking techniques that permit full expression of the unique deep sandy loam ‘Dodon Series Soils’ that lend their wines distinctive aromatics and subtle minerality. \n\n\n\n  \nUsing only grapes grown on their farm\, their vineyard and winemaking techniques emphasize individual attention to each cluster and protecting the quality of the fruit. They believe that deep soils and abundance of Southern Maryland sun are the keys to producing rich\, balanced\, aromatic wines. In other words\, it is the unique qualities of the site that determine the product (“vins de terroir”)\, not a winemaker with a strong stylistic vision (“vins d’effort”). The result is a combination of old world and new world style that is particular to this area of Southern Maryland. \n\n\n\nSchooner Woodwind’s Dinner Cruises are a very casual affair. They believe that the central Maryland Piedmont\, sitting at the foothills of the Appalachian Mountains\, has the right mix of rolling hills\, rocky\, low-fertility soils\, regular breezes\, sunshine and rain to be the home of some truly delicious wines — wines that express the land in which they are grown\, enhance the food they accompany\, and most important of all are a joy to drink. \nEstate Winery: “In pursuit of making great wine\, we are fully committed to being an estate winery – every grape for every bottle of wine that we produce is grown on our farm and always has been.  The quality of a wine is determined first and foremost by the quality of the grapes that go into it\, so we take our farming very seriously. (OK\, that is just a nice way of saying that we are control freaks – we admit it).” \nSustainability: “We are also big believers in making use of the resources that we have and taking care of those resources so they will continue to be available down the road.  To that end\, we spend a great deal of time doing what we think of as farming the soil – making sure that the microbial life in the soil has a good mix of air\, water and nutrients so it can create a healthy environment for our vines.” \n\n\nSchooner Woodwind’s Dinner Cruises are a very casual affair. And please\, feel free to raise the sails\, steer the boat\, or sit back and relax. \nHome Vineyard Chardonnay\nThis Chardonnay\, grown in channery loam soils overlaying a bedrock of greenstone schist\, offers bright aromas and rich complexity. A timely harvest on September 23rd captured brisk acidity from the vineyard. Fermented with native yeast in a mix of 75% stainless steel and 25% French oak. Paired with Jumbo Lump Crab and Micro Green Salad on Belgian Endive Leaf \nRevelry\nA lively red blend produced from Bordeaux varieties grown in the hills of northern Maryland\, this wine offers vibrant aromas and bright character. Crafted with minimal intervention and aged in French oak barrels for up to thirty months.  Paired with Grilled Chicken Breast topped with oven cured tomato-feta-extra virgin olive oil on a bed of orzo with roasted vegetables \nChannery Hill\nA mélange of 85% Merlot and 15% Cabernet Sauvignon grown in the hills of northern Maryland. This wine is a reflection of the Old Line State – generous\, distinct and intriguing. Crafted with minimal intervention and aged in French oak barrels for eighteen months.   Paired with Charred Garlic-Thyme Rubbed Bistro Beef Skewers\, Trio of Roasted Fingerling Potatoes \, Wild Mushrooms and Green Beans with sea salt.  \nTrio\nA blend of 80% Chardonnay\, 18% Sauvignon Blanc and 2% Viognier grown in the hills of northern Maryland. The resulting wine offers bright acidity and natural sweetness.
